Coto Makassar and Pallubasa may look similar, but they have their own unique characteristics. Pallubasa has a thicker sauce that is made from a mixture of turmeric and grated coconut, giving it a similar appearance to serundeng. Additionally, it is often served with a raw chicken egg yolk.
Both dishes use beef and its innards as their main ingredients. However, Coto Makassar typically includes cuts of meat along with innards such as lungs, liver, and intestines. Pallubasa, on the other hand, uses the less expensive parts of the meat that include muscle, tetelan, and fat.
Sop Konro and Konro Bakar are two dishes that are synonymous with the city of Makassar, and its popularity stretches way back probably to centuries. The word "konro" is often associated with beef ribs, however, it literally refers to cows.
Traditionally, Sop Konro is a clear beef soup with a rich flavor and a touch of coriander, kluwak, and other spices.
